When the oil is hot, first add the carrots as they take some time to cook, then add the onion while stirring. Add the celery and stir until it is half-cooked. Be careful not to over-cook the vegetables as the boiling soup will cook it even further and this can cause the vegetables to melt.
Add the chicken to the pot, along with the Thyme and mix together with vegetables.
